Why not, glutenfree pancakes on a Tuesday? Party like it’s Saturday. I tried these delicious pancakes and had to share my easy gluten free pancake recipe with you. When I first started eating gluten-free, I ate pancakes all the time because I felt like that was the only thing that could truly fill me – like bread did before. Now I only eat pancakes as a dessert, or on a mega cheat day. Like today.
I tried to play around with toppings today, because normally I top it off with some shredded coconut or fruit. But now I went all crazy with marshmallows, sugar and sirup! Yum. I love my inner Martha Steward.
A simple recipe for gluten-free pancakes:
All you need to mix:
3 cups of Buckwheat
1 cup of milk
1 egg
1 tbsp melted butter or oil
If you’re eating Paleo, you should change the buckwheat to almond flour, use coconut milk and butter ghee. Shredded coconut makes the best topping together with some fresh fruit. Yumm.
